It can be overwhelming to try and figure out what to do with all of them, but don’t worry, I’m here to help.

Today, I’m going to share with you three quick and super-easy pumpkin recipes that will solve all your pumpkin problems. So, without further ado, let’s get started!

To begin, you’ll need a lot of garlic, onion, and of course, pumpkins. I’m going to show you how to make three different recipes, but you can use any kind of pumpkin you have on hand.

Before we dive into the recipes, let’s prepare the main ingredient- the pumpkin. With Hokkaido pumpkins, it’s pretty simple. Cut them open, scoop out the seeds and fibers, cut them into the desired size and shape, and voila, your pumpkin is ready to use. If you want, you can also clean and dry the pumpkin seeds and roast them in the oven for 15-20 minutes at 180 degrees Celsius.

Now, let’s move on to the recipes. For the first recipe, we’ll need lots of onions, garlic, and a few other spices to make a delicious tomato sauce. Cut the onions into small pieces and add them to a pan with some olive oil. Cook them slowly until they become nice and soft. Then, add the garlic and ginger and continue to cook for a few more minutes. Next, add passata or tomato paste and enough water to make a saucy consistency. Then, add the spices, including a generous dose of cumin, some brown sugar, cinnamon, garam masala, and chili powder. Finally, add some coconut milk and lime juice to give it a tangy and creamy flavor. Once it’s all mixed together, add in the pumpkin and let it cook for 30 minutes in the oven.

For the second recipe, we’ll make a delicious garlic and chili yogurt dip. Start by mixing some garlic and chili with Greek yogurt and lemon juice. Add some olive oil for added richness and blend it all together. Cut the pumpkin into small cubes and roast them in the oven until they turn golden brown. Add the pumpkin to the yogurt dip, sprinkle some fresh parsley over the top, and serve.

Lastly, for the third recipe, we’ll make a savory and unique pumpkin stir-fry. Begin by sauteing garlic and fermented black beans in a pan with some oil. Add some soy sauce, sugar, and water to the mix and stir until everything is combined. Then, add in the pumpkin and cook for 30 minutes until everything is tender and the sauce has thickened.
