Cremiger Süßkartoffel Auflauf mit Feta!
Today we are cooking a creamy sweet potato casserole together for our show “Auf Laufzeit”! To begin, every good casserole starts with garlic, and we will need two cloves. Using one clove, we rub the casserole dish to add a nice garlic flavor, and then we chop up the garlic with the other clove. We will also use the white part of a leek, and cut it into pieces, saving the green part for later.
Next, we sweat the garlic and leek in our homemade clarified butter with a small piece of colorless cinnamon. Then, we add cream and season it generously with salt, pepper, and nutmeg. We cook everything until it comes to a boil, then turn off the heat and let it sit for a bit. In the meantime, we finely chop a good handful of parsley and add it to the green part of the leek that we saved earlier.
Now, it’s time to peel and slice the sweet potatoes into thin rounds. We can use a kitchen machine or a knife for this, but using a knife might result in thicker slices and a longer cooking time. We remove the cinnamon stick from the sauce and stir in the parsley and leek mixture.
For the casserole, we can get creative with how we layer our sweet potato slices. We can either arrange them evenly like I’m doing here, or we can put them in randomly. We sprinkle the layers with some of the sauce, and to add a bit of extra flavor, we add a layer of crumbled feta cheese in the middle. Finally, we sprinkle some more parsley on top and a thin layer of Parmesan cheese.
The casserole is baked in the oven at 200 degrees Celsius for about 40 to 50 minutes, but the cooking time can vary depending on the thickness of the slices and the oven. Once it’s done, we take it out of the oven and admire our delicious creation!
