Nothing beats getting a beautiful, crispy, warm, and fragrant baguette out of the oven on a Sunday morning. I will show you how to easily make it yourself, so let’s have some fun with the video. Hello, everyone, today we will be making a lovely French baguette together.
I like mine really crispy. The ingredients are very simple, and it is also really easy to make. However, you should bring some time as the dough needs to rest and rise a little. We will need 400 grams of wheat flour type 550, which absorbs water slowly and remains stable when baking. Then we need ten grams of fresh yeast or three grams of dried yeast, one and a half teaspoons of salt, a pinch of sugar, and 270 milliliters of lukewarm water.
Now let’s get started. As always, we take a large bowl and mix in all the dry ingredients, including the flour, salt, sugar, and yeast. We can now mix it a bit to distribute everything evenly. In the next step, we add the lukewarm water. Why does it need to be lukewarm? It is because the yeast works best at that temperature.
As I do not have a kitchen machine that kneads the dough, I have to do it with my hands. The dough is quite wet and sticky, but it should be that way. If it does not change even after several minutes of kneading, add a little more flour to the bowl. However, the dough will become a little firmer during the resting time, so do not worry.
After about 15 minutes of kneading, the dough should look something like what you see in the video. Now cover it with a towel and let it rest for about one and a half to two hours. After that time, the dough should have risen almost twice its size, as you can see in the video.
For the next step, we need to prepare a clean working surface with some flour. It is quite important, as the dough is still a little sticky. If you have a baguette mold at home, you can use it; however, I do not have one, so I use a towel. Place it on the dough and sprinkle it with some flour. This will be helpful later when the baguettes need some more time to rest.
Now we take the dough and shape it into a small ball so we can halve it later. Here, a dough roller would ruin everything as it would squeeze out all the air created by the yeast, making the dough less fluffy. We then stretch and press the dough into a rectangle that is approximately the size of a baking tray, as shown in the video.
Now we roll up the top end of the dough, so it becomes a baguette. We then close the ends by pressing them together and rolling the dough until the ends disappear. We do it again with the second ball of dough.
The baguettes need to rest again for about 20 minutes on the prepared surface. Ten minutes before they finish resting, we preheat the oven at 210 degrees Celsius with circulating air, or 230 degrees Celsius with top and bottom heat. Also, do not forget to put some water in either two baking trays or a fireproof bowl on the bottom of the oven.
When the baguettes finish resting, we put them in the oven to bake for about 22-30 minutes, depending on your taste. I like mine more baked, so I bake them a little longer. After 15 minutes, take away the baking paper underneath for the bottom to become crispy. When they finish baking, they are ready to be eaten, so enjoy.
