Finally, the day has arrived and I am thrilled to share this classic recipe with all of you. I feel a bit like Homer Simpson as I sit here with my pink donut and am able to supply all the construction workers with these delicious treats. Donuts always consist of a yeast dough and today we will be making the classic variant, fried donuts. You can also make them in the oven but I feel they end up looking like buns as they are not fried. Therefore, we will be going the classic route.

To start, I will be making the yeast dough. For this we will need a cube of yeast, two tablespoons of warm water, 50 grams of sugar, 800-850 grams of flour, 2 eggs, 2 egg yolks, 315 milliliters of milk, a teaspoon of salt, a little vanilla extract, 70 grams of butter, and an untreated lemon. First, we will make a pre-dough by dissolving the yeast in the warm water. This will help the dough rise faster. We can check if the yeast is active by observing if it begins to bubble. Next, we will whisk in the sugar and warm milk and let it sit for five to seven minutes until small bubbles appear on the surface.

Now that the yeast has activated, we will put it into the mixer along with the remaining ingredients. It is important to use warm milk and eggs to make the dough moist and fluffy. Add some vanilla extract and a pinch of lemon zest for extra flavor but not too much as it might overpower the dough. Begin to mix in the butter and remaining flour slowly until it forms a sticky ball. Knead the dough for five to seven minutes until it is smooth but not too tough. If it is too sticky, add a little more flour.

After kneading, shape the dough into a ball and let it sit in an oiled bowl for an hour. Once the dough has risen, roll it out on a floured work surface until it is approximately one centimeter thick.
