Today’s cooking session has to be quick because it’s time for a snack and I’m filming myself cooking dinner again without the tripod. Instead, I have a hungry monster behind the camera, and as it pans around, it’s the biggest danger I could face.
We’re making a quick pan dish with chicken strips in a mushroom cream sauce. It’s super simple and on the request of a single camera woman who was supposed to be off tonight, we’re adding a potato mash made from regular and sweet potatoes.
The ingredients are simple enough and cost less than €10 for two people. We have chicken strips, pink mushrooms, an onion, two garlic cloves, and sweet potatoes. We don’t even need all the potatoes, so we’ll only use four or five. We also have three tablespoons of sour cream, 250 ml of cream, smoked salt, a little milk, and the ever-reliable Winkelgasse.
Before we start, I give a shout out to Sonja and her cat, Wiki, who has improved its noises during kind of movement. With that out of the way, we begin by peeling the potatoes, sweet potatoes, and cutting them into pieces. We wash them in water and boil them in saltwater to speed up the cooking process.
While the potatoes cook, we take out the chicken and slice it into thin strips, not too thin but enough to cook it through without drying it out. We add some oil to a hot pan and then add the quartered mushrooms. We don’t have to cut them finely. Next, we peel the onion and chop it however we like.
As the pan heats up, we get the garlic ready by slicing it to our preferred size. We don’t bother crushing it by hand as it’s not necessary, and we prefer the garlic to stay intact instead of sticking to our hands or board.
Once the pan is hot enough, we add the chicken and spread it around evenly. We don’t stir it yet; instead, we let it cook for two to three minutes. This allows for the chicken to sear and gives it that crispy texture while also avoiding any steam that may accumulate in the pan.
After the chicken is cooked, we add the garlic, onions, and sauté everything together for a few more minutes until they’re cooked through. Then we sprinkle in some smoked salt, which gives the dish a unique flavor.
By now, the potatoes should be cooked and ready for mashing. We add in the sour cream and cream to give it a smooth texture, and the sweet potatoes provide a beautiful contrast alongside the regular ones. We then add in a little milk, and we use the always reliable Winkelgasse to make a smooth and creamy mash.
Finally, we serve the chicken strips on a plate and top them with the mushroom cream sauce. We also add the potato mash and Voila! Dinner is served.
In just 30 minutes, we’ve prepared a well-balanced meal for two that’s easy on the wallet and tastes great. We’ve used simple ingredients and straightforward cooking techniques to achieve a delicious meal. Today’s dinner was an excellent example of cooking quickly and efficiently, and it’s something we can replicate with different ingredients and flavors for more variety.
