Die Aargauer Rüeblitorte, auch bekannt als preisgekrönter Karottenkuchen, ist eine regionale Spezialität aus dem Kanton Aargau in der Schweiz. Der Kuchen besteht aus einer Karottenmasse, die mit Haselnüssen und Gewürzen verfeinert wird, und ist besonders saftig und aromatisch. Hey guys, welcome back to Einfach Daten Schön! Today, we’re going to be making an award-winning recipe, a type of carrot cake known as the “Dauer-Üblich Torte” which is very popular in Switzerland. To start, I am separating four eggs and adding a pinch of salt before whisking it with 50 grams of sugar to make perfect, stiff peaks for the egg whites.

Once that’s done, I transfer the egg whites to a bowl and start making the batter. I need 150 grams of softened, unsalted butter at room temperature from the previous day, 70 grams of sugar, and the zest of half a lemon. I whisk these ingredients together until smooth and then add four egg yolks and 50 grams of flour. Next, I add 240 grams of grated carrots, 100 grams of ground hazelnuts, and 180 grams of white flour.

I mix everything together and then bake the batter in a 24cm baking tin for 40-50 minutes at 190 degrees Celsius. While the cake is in the oven, I start working on the marzipan decorative elements. I use orange and green marzipan to shape small carrots, sticking the green marzipan on top to make them look more realistic.

Once the cake is done, I remove it from the oven and let it cool. I remove the baking tin and brush a layer of apricot jam onto the cake to prevent the frosting from soaking into the cake. Then, I make a simple sugar glaze and pour it over the cake, letting it dry and harden. I then add some roasted almond flakes and dust the top with some powdered sugar.

Finally, I add the marzipan carrots on top of the cake and slice it for serving. The result is a deliciously moist and flavorful carrot cake that is perfect for any occasion.
