Welcome to Mutti’s kitchen, today we are baking! We have plenty of time and I have already halved a kilogram of plums. We will be making the tastiest cake that I know, with streusel on top. So, let’s get started with the streusel. For this, you will need 120 grams of butter.

As with most streusel recipes, you will need the same amount of sugar as butter, so 120 grams. And because it’s a cake and we like to improvise, I like to add a good pinch of cinnamon for that extra special taste. You will also need to add 200 grams of flour and a tea spoon of vanilla sugar.

You could easily knead this by hand, but I prefer to use my mixer to create the perfect texture. It’s important not to overmix the streusel, so a quick knead by hand after it’s been mixed is perfect. The butter and sugar are thoroughly mixed, so now it’s time to add five eggs.

I have mixed this for you already because this can be time-consuming. Next, add 300 grams of flour, a packet of baking powder and two teaspoons of vanilla sugar. Don’t forget to add a pinch of salt to the mix.

Now we mix, and we mix for about 23 minutes until the mixture is light and fluffy. It’s now time to add 120 grams of oats. I add this at the end to ensure the perfect texture. Once the batter is ready, preheat your oven to 180 degrees Celsius.

I have lined a baking tray with baking paper, and this is where we will pour the batter. Next, place the halved plums neatly on top of the batter. It may take a while, as we used one kilogram of plums for the original recipe, but don’t worry, it will be worth the effort.
