But we thought it would be nice to show how an oven can be used for more than just baking or roasting. So we will heat the sausages in the steam cooker of the oven. It’s a great way to heat up sausage without burning them and giving them a great temperature.
As Haasi continues to stir the roux, Claudia takes over preparing the spaetzle. She takes the dough out of the bowl and begins to push it through a spaetzle press into a pot of boiling water. With each press, the small dumplings fall into the water and sink to the bottom, slowly rising as they cook. It’s a mesmerizing sight to see them take shape.
Once the spaetzle and lentils are cooked, Haasi strains off the water and carefully combines them with the roux to create a rich, hearty sauce. The Vienna sausages are steamed to perfection in the oven and sliced into bite-sized pieces before being added to the lentil and spaetzle mixture. Finally, a bit of vinegar is added to the pot for a sour kick that balances well with the richness of the dish.
As Haasi and Claudia plate up the lentils with spaetzle and Vienna sausages, the comforting aroma fills the kitchen. They sit down to enjoy the dish while they talk about creating more Swabian comfort food recipes for their segment. Claudia suggests making Maultaschen next, a Swabian take on ravioli filled with meat or vegetables.
With full stomachs and ideas swirling in their heads, they pack up and head back to the Neff kitchen to plan their next segment. As they drive away, they both feel a sense of satisfaction in having shared a bit of regional cuisine with their audience and look forward to doing it again soon.
