To make the spicy tomato chutney, we asked Ingo to fry garlic until it turns a little brown and then add chili flakes and samba kollegin, which is a type of chili that is commonly used in this dish. If you don’t have samba kollegin, you can use other types of chili or fresh chili.

After that, chopped tomatoes from a can are added, but it tastes better with fresh tomatoes. Let the sauce cook until it has a better consistency, then taste it and add more salt if needed. Store it in the refrigerator for about three to four days.

Now, let’s move on to making the dumplings. Knead the ingredients together until you get a smooth dough. The dough should not be too soft, or else it will be difficult to shape the round dumplings. Spread a thin layer of neutral oil over the dough and let it rest for about 30 minutes.

For the filling, prepare fresh vegetables such as green onions, carrots, and Chinese cabbage. Finely chop the green onions and separate the whites and greens. Cut the carrots into small pieces, and for the Chinese cabbage, you can cut it into thin strips and then blend it briefly in a blender. Add salt and let the mixture rest for about 20 minutes.

After that, press the vegetables to remove as much water as possible. Heat oil and fry garlic and ginger until they turn slightly brown. Add the white part of the green onions and the pressed vegetables, and cook for a minute. Then add the remaining ingredients and let it cool before filling.

Roll out a piece of dough and use a mold to shape it into a round or crescent shape. Put a small amount of the filling in the center, and close the edges by pressing them together. Steam the dumplings for about 10-12 minutes until the dough looks glossy and the filling is cooked.

The remaining dumplings can be stored for up to three days in the refrigerator or frozen. They can also be pan-fried the next day.
