Hey police and welcome to a new episode of Lag Zwischen, where there is plenty of steam, as my head is already boiling with ideas. Today, we will be making incredibly delicious roasted leftover potatoes in the oven, and I am sure that you will absolutely love this recipe because it’s super simple to prepare.

All you need are a few ingredients, but the preparation is extremely easy. I have here about 1.2 kilograms of floury potatoes, which are crucial for achieving the desired consistency within the potato. Firstly, we need to peel the potatoes, which is essentially the most considerable work. Then we can put them in the boiling water. Although we usually boil potatoes in cold water, this time, I am doing it in hot water because the camera setup took so long to arrange. However, you can prepare the potatoes in the typical way.

It’s essential to ensure that the potatoes are completely covered with water. Afterward, let them cook for about 15 minutes until they are partially cooked but not thoroughly cooked. Once done, drain them over a sieve and let them steam for a while. Shake them gently to break the surface of the potatoes, which allows them to become extra crispy when roasted.

Next, we need an oven-safe dish, which I will grease with butter and olive oil. I have already preheated the oven to 180 degrees Celsius (fan). Then, we can put the potatoes side by side in a single layer, already salted and peppered to taste. While the potatoes steam, I will prepare the next ingredient - garlic.

I will use 6-10 cloves of garlic, which I will cut into small pieces and squash them with the blade of my knife, releasing its aroma. Then, I will add them to the potatoes in the oven-safe dish. Now, we can roast the potatoes in the oven at 180 degrees Celsius for about an hour.

Afterwards, take them out of the oven, press them gently with a fork, and return them to the oven for another 20 minutes. Finally, I will add some herb oil or fresh rosemary to give it an extraordinary flavor. If you want to use store-bought herb oil, make sure you check the ingredients for additives and preservatives.

When done, the potatoes should have a lovely crispy texture and a beautifully creamy and flowing consistency. The combination of rosemary and garlic gives them an amazing flavor that you won’t forget.
