I was lucky enough to explore the picturesque Amalfi Coast, and while there, I discovered the perfect recipe for vegetable pasta that I want to share with you today. But let me rewind a bit and tell you how I found this recipe.
I was in Amalfi, a touristy town with lots of options for food. However, I was skeptical of all the restaurants catering to tourists and thought they might not offer authentic Italian cuisine. So, I decided to hike up a mountain to find a restaurant that was off the beaten path.
The roads got darker and steeper, but Google Maps showed me a restaurant at the top. When I reached the restaurant after my exhausting hike, I was served this delicious vegetable pasta with raw ingredients. It was a beautiful mix of fresh vegetables and pasta – exactly the recipe that I was looking for!
To make this recipe, start by chopping fresh vegetables from your garden or your local market. I started with zucchini, which I love to slice and cook at home. Did you know that zucchinis weren’t even considered a food item in the past? I first spotted them in IKEA, and now they’re a staple in my kitchen.
Next, grab some ripe tomatoes, which are in season right now and taste just like they do in Italy. I used yellow and red tomatoes to add color and flavor to the dish. I also added some diced spring onions to give the pasta a bit of a kick.
