Music: A delicious red cabbage dish that everyone loves, especially during the Christmas season as a side dish. Today, I will be making apple red cabbage, just like my Oma used to make.

There are some things we always want to take with us to our own kitchen, and family recipes are definitely one of them. I have 1.3 kilos of red cabbage here but after removing the stem, it comes to about 1 kilo. You can easily adjust the ingredients according to how much you need. Red cabbage freezes well, so it can be prepared ahead of time to reduce the stress during the Christmas season.

I will show you a whole menu of dishes that goes well with this red cabbage in future videos, but for now, let me demonstrate how to make this apple red cabbage dish. I will cut the cabbage in half to make it easier to slice. Although one could use a kitchen machine to do the slicing, I prefer to do it by hand to show that it is homemade.

I will remove the stem and cut the cabbage into thin strips. Next, I will add 1 tsp of sugar and 1 tsp of salt. However, be careful when adding additional salt since we have already added some earlier. Then, I start kneading the cabbage with my hands. This will soften the cabbage and allow it to release more juice.

Meanwhile, I have heated up some goose fat in a pan and added finely chopped onions. Once the onions are translucent, I add the cabbage and let it cook together with the onions. I have already peeled and chopped the apples into small pieces, and I will add them to the pan. In addition, I will add 2 bay leaves, some caraway and thyme, a mixture of pepper and pimento, and a little bit of nutmeg for extra flavor.

I pour in some apple juice (you can also use red wine as an alternative) and add the cabbage juice, which we extracted earlier. Be careful when adding more salt or sugar since we have already added some earlier. Now it’s time to let the dish simmer and reduce the liquid until it is almost gone.

To give this dish a unique taste and a beautiful shine, I add a tablespoon of red currant jelly at the end. Finally, I can plate up the dish and serve it with the other courses, which I will share with you in future videos.
