Today we’re making an ultra-creamy and delicious potato soup. But, quite unusually for a potato soup, we’ll start by chopping up some carrots. Chris loves adding small vegetables to his soup, so peel and chop the carrots as you prefer, adding more or less to the soup as desired.

Now, let’s add an onion, chopped finely. Don’t worry, everything will be blended later on anyway. Time to peel and chop the potatoes as well. Sweat the carrots and onions in a pot with some butter or homemade schmalz (clarified butter) until the onions turn translucent. Making your own schmalz is quite easy and tastes great.

Add the potatoes and stir for a minute or two until they start to sweat as well. If you like what you see, consider subscribing to our channel, we’d appreciate it! Next, add the vegetable broth. Usually, we have homemade broth on hand since it’s versatile, free of MSG, preservatives, and sugar, perfect for sauces, soups, and other dishes.

Let everything cook until it’s nice and soft. Meanwhile, we’ll create some crispy croutons by cutting the bread crusts into cubes and tossing them into a pan with a generous amount of schmalz. Do not fear the oil - Chris believes that good croutons require a lot of fat.

Remove the croutons once they’re golden and crunchy. In the same pan, use low heat to crisp up some Serrano ham. We’ve sped up the process for you, but you’ll need a bit of patience to get it nice and crispy. These little touches make a significant difference in the final outcome of the soup.

Once the potatoes and other vegetables soften, blend everything together with a stick blender. You can always adjust the smoothness to your liking. Add a bit of cream to make it even more rich and velvety. Don’t forget to give it a taste, adding salt and a pinch of nutmeg, a typical spice for potato dishes in our family.
