Have you ever had that feeling where you come home super hungry and instead of cooking something, you just can’t bother? I know that feeling too well, especially when you’re really hungry. You don’t want to spend hours in the kitchen, and you need something quick. That’s why I brought three pan dishes today that you can make within five minutes, and not only are they quick, but they’re also damn delicious!
The first recipe is one of my absolute favorite dishes when it comes to using up leftovers. Fried rice tastes great and is super flexible in preparation, meaning you can take the things that are still lying around in the fridge and need to be used up, or you can prepare it entirely according to your taste. I’m making a vegetarian alternative today, but you can, of course, make it with chicken, beef, shrimp, or whatever you like, depending on your preference.
Regarding leftovers, it’s best if you have some rice left over, ideally cooked the day before and stored in the refrigerator. That just brings the best quality to the fried rice. That may sound weird, but using old rice will create the best-fried rice, as if you use freshly cooked rice, it’ll get a bit clunky, and everything will turn to mush. So, using yesterday’s cooked rice will help to prevent this.
To start, I chop up a vegetable onion, and if you like, you can also add a garlic clove to it. It’s not an absolute must, but it brings a nice flavor. Next, peel and finely dice a carrot and thinly slice a green onion. Put everything into the pan, and heat it up. I use sesame oil for frying, and that brings an Asian taste to the dish. You can, of course, use peanut oil, rapeseed oil, sunflower oil, or whatever oil you have in the kitchen.
For the broccoli, I use florets that I still had from the previous day. You don’t have to make a complete broccoli head, just as much as you need for the dish. Make sure to cut all the ingredients as small as possible to save time. You can, of course, add other ingredients such as soy sprouts, Chinese cabbage, or even a small diced fresh pineapple. It’s essential to pay attention to cutting all the ingredients small so that they can go cook quickly.
Next, crack two eggs into the pan and scramble them. Once scrambled, add in your pre-cooked rice, which should have a few browned spots, making sure to stir everything well. You can also add in some frozen peas, which this will help to give it a nice, fresh, crunch flavor. Finally, add Sri Racker sauce over it and eat it while still warm.
Overall, these three pan dishes are great when you’re pressed and need something quick and delicious. With the various ingredients, you can mix and match with whatever you have in your kitchen.
