Hello, I am a real cook from chefkoch.de and today I will show you how to make a really delicious vegetable stir-fry. For this, we need a good, thick-bottomed wok with a deep base so that it gets really hot. It is very important to cook with high heat, quickly and crisply, so that the vegetables retain their crunch.
We usually use induction cooktops, which require a smooth and rounded base. Otherwise, a wok with a very round base can be placed on a regular cooktop, such as gas or electric.
For this demonstration, I have prepared some vegetables - peppers, zucchini, carrots, and onions - but you can use whatever you like. It’s important to cut everything into uniform pieces so that they cook evenly. If you’re adding meat, shrimp, or fish, don’t add everything at once - cook them in batches to give them a nice sear and develop a crust.
We’re going to season the vegetables with soy sauce, fresh chopped chili, sesame oil, and fish sauce - depending on your taste preferences. We can also add some garlic, ginger, or even a little sugar for sweetness.
When cooking with a wok, it’s important to use a high-heat oil, such as sunflower, coconut, peanut, or canola. Olive oil is not ideal for stir-frying, as it has a low smoking point and burns easily.
We start by heating up the wok until it’s very hot, adding about 4 tablespoons of oil. Then, we add the carrots and let them sear for a bit before adding the rest of the vegetables. We move everything around so that it cooks evenly and has nice color on all sides.
We can add sliced shallots or garlic towards the end, as they burn easily. We finish the stir-fry with a drizzle of sesame oil, chopped peanuts, or scallions.
Stir-frying is a quick and healthy way to cook vegetables, meat, or seafood - and it’s very versatile. You can serve it over rice or noodles, or as a side dish. The key is to have everything prepped and ready to go, so that you can cook quickly and avoid overcooking.
