Baking macarons may seem like a daunting task, but with the right tips and tricks, it can be a fun and rewarding experience. As someone who has been baking macarons for over seven years, I know how frustrating it can be to not get the perfect results. That’s why I launched my website ‘mein-macaron’ where I share all my expertise and experiences to help others bake macarons with ease.
While there are numerous recipes and articles on the internet about baking macarons, I realized that there was a gap when it came to instructional videos. That’s why I decided to create the ultimate instructional video on how to bake macarons.
To begin with, macarons require aged egg whites. I always separate my eggs three days in advance and leave the egg whites covered in the refrigerator. This helps to evaporate part of the liquid and makes the egg whites more stable later. It’s important to use aged egg whites in macarons to get the perfect texture.
Once the egg whites are at room temperature, it’s time to weigh all the ingredients, including finely ground almonds mixed in with icing sugar. Sift it all through a sieve, and then use a smooth perforated nozzle with a diameter of eight millimetres in the piping bag.
To dye the macarons, use powder color as to keep the dough free from additional liquid. Whip the egg whites for eight minutes while adding sugar in between to get stiff peaks. Once the egg white is stiff, quickly stir in the color. The next step is mixing the dough by adding the beaten egg whites to the almond mixture. Ensure that there are no lumps in the mixture, and it’s thoroughly mixed.
Keep in mind the macaron dough is robust and can handle piping dots onto the baking tray. Knock the baking tray hard from below to get a smooth surface on the macaron dots. Let them dry for 30 to 60 minutes or until they’re ready for baking according to the weather. Once ready, preheat your oven to 160°C/320°F on convection setting and bake for 12 minutes.
To fill the macarons, sort them by size and lay them down side by side in a row. You can choose any filling of your choice, and after filling, seal the macarons and let them mature for 12 to 24 hours.
Baking macarons may take some effort, but it is worth it.
