Have you ever wanted to have a consistent supply of eggs at your disposal? Well, in this video, I’m going to share with you how to do just that. Hi, my name is Stories and welcome to a new video from Stockpile Yourself. Every chicken owner may face a common problem – their chickens do not lay eggs throughout the winter season or they lay very few. However, when the weather begins to warm up, the chickens start laying more eggs than we could eat or use. Luckily, there are several methods to preserve your eggs and I will go through a few of them today.
The first method is to freeze the eggs, which is very simple and easy. You can freeze them by either keeping the whole egg or separating the whites and yolk. To prevent the egg from bursting, it’s better to crack the egg and pour the contents into an ice cube tray or a small container. This way, you can easily pick one or two cubes when needed. It is important to consider which recipe you will use the eggs for so you can freeze them in the right quantity, for example, if you need five eggs for a cake then freeze five yolks and five whites. Otherwise, it may become difficult to divide the frozen egg.
Another method is to pickle the eggs, which involves storing them in a solution in a glass jar. This is an old method that our ancestors used to preserve excess eggs for the times of the year when there were fewer eggs. It’s simple to do but I haven’t tried it myself. However, I plan to give it a try and let you know how it works.
Today, I will show you another method of preserving eggs by pickling them in a vinegar solution. For this, you need to prepare a simple vinegar solution by mixing equal parts of water and vinegar. Add some salt and sugar and boil until they dissolve. You can refine this solution by adding some herbs and spices according to your taste. Next, cook the eggs and let them cool down. Peel the eggs and put them into a glass jar. You can then add your preferred herbs and spices such as garlic or onions. Once the jar is filled with eggs and spices, pour the vinegar solution over them. Store the jars in a dark and cool place like a basement or pantry for several months.
I have prepared three different variations for you – the Asian-style, Spicy, and Cumin. For the Asian-style pickling, I added some soy sauce, lemon grass, onions, garlic and some chili flakes. For the Spicy version, I used some red onions, garlic, chilies, and peppercorns. And for the Cumin, I used cumin seeds, some carrots, and some green peppers. You can always use different spices and herbs depending on your mood and preference.
