Blaukraut

Good evening dear viewers, and welcome back to our cooking show, “Your favorite dish with Alfons Schuhbeck, presented by Möbel Höffner”. Today, I am cooking with Matthias Zenker. Hello Matthias, how are you?

Matthias: Hello everyone, I am doing well, thank you.

Today, we are preparing a Bavarian dish that is quite simple, but very flavorful. It’s called “Pfälzer Saumagen”, which translates to “Palatine stuffed pig’s stomach”. It’s a dish that is traditionally served with sauerkraut and potatoes. This dish is a favorite of mine, and I’ve been looking forward to making it for you all.

Matthias: That sounds delicious. Can you tell us a little more about the dish?

Yes, of course. The Pfälzer Saumagen is a hearty Bavarian dish that is made by stuffing a pig’s stomach with a mixture of pork, onions, potatoes, and spices. The mixture is then cooked in the oven until tender and flavorful. It’s a dish that is perfect for cold winter evenings when you want something warm and nourishing.

Matthias: That sounds amazing. How did you develop a love for cooking?

Well, cooking has always been a passion of mine. When I was 17, I received a cookbook from a Munich chef named Alfons Schuhbeck. It was a gift from a friend, and I immediately fell in love with the recipes in the book. I began experimenting with different dishes and cooking for my friends, and soon realized that cooking was my true calling.

Matthias: That’s great. And how did you become involved with Möbel Höffner?

I began cooking at home and posting pictures of my dishes on social media, and eventually, Möbel Höffner reached out to me. They asked me to come on their cooking show and share one of my favorite recipes. I was thrilled to have the opportunity, and it’s been a wonderful experience ever since.

Matthias: That’s fantastic. And what are some of the key ingredients for the dish?

Well, for the Pfälzer Saumagen, you will need a pig’s stomach, pork, onions, potatoes, and spices like bay leaves, salt, and pepper. The ingredients are all combined and cooked together for several hours until tender and flavorful.

Matthias: That sounds delicious. And what is your secret to making the dish perfectly?

The secret to making a perfect Pfälzer Saumagen is to cook it slowly over a low heat. This will help to ensure that the meat is tender and the flavors are fully developed. Additionally, it’s important to use high-quality ingredients and to season the dish carefully.

Matthias: Sounds great. And how is the dish usually served?

The Pfälzer Saumagen is traditionally served with sauerkraut and potatoes, which pair perfectly with the flavors of the dish. It’s a hearty and comforting meal that is perfect for cold winter evenings.

Matthias: I am looking forward to trying it. Thank you for sharing your recipe with us.

Thank you for having me, it was my pleasure. I hope everyone enjoys making this dish at home. Guten Appetit!
