Hey guys, welcome to “Einfach Button schöner” (Simply Button more beautiful), today we’re making incredibly delicious “Donau” (Danube) donuts! Let’s start with the dough, I need 230 ml of milk, 500g of white flour, 215g of butter, 30g of yeast, 10g of sugar, 15g of salt, a bit of lemon zest, and we’ll mix everything in the kitchen machine. Initially I’ll start with a lower speed and after 23 minutes I’ll increase it until the dough becomes smooth and firm. The dough is not supposed to contain any oil.
Once the dough is ready, we’ll form the donuts using a classic technique where we’ll cut out pieces of dough and form them into balls with a hole in the middle. I prefer to portion the dough into pieces of around 70g and create the hole by pressing down with a wooden stick and then gently widening it with my fingers. After shaping, we leave the donuts to rise for about 40-50 minutes.
When they’ve risen, we heat up the oil in the pan to a temperature of 170-180 degrees Celsius. We fry the donuts for around 1-1.5 minutes on each side until they turn golden brown. After frying, we leave them to cool down a bit before we decorate them.
For the decoration, we’re going to use liquid powdered sugar, also known as fondant, which we’ll heat up to 60 degrees Celsius while stirring. We’ll also add a bit of food coloring and a dash of lemon juice to make it sweeter. We’ll take every donut and dip it into the fondant until it’s coated halfway. To make the donuts more colorful, we’ll sprinkle some colorful sprinkles on top.
Donau donuts are a traditional pastry from Austria that are very similar to “Krapfen” (donuts), but they differ in the filling. While the classic Krapfen is filled with jam or vanilla cream, the Donau donut is usually filled with a chocolate and hazelnut spread.
