However, from now on, regular videos will come and with them new recipes for you. Today, we start with my recipe for a simple and quick dessert that is perfect for the strawberry season. You can find the quantities in the info box below and the complete recipe to read on my blog. For this recipe, you only need a few ingredients: whipping cream, powdered sugar, channel liquor, a vanilla pod, and strawberries.

First, separate the egg yolks from the egg whites, because we only need the egg yolks for this recipe. Mix the egg yolks with powdered sugar over a hot water bath until the eggs become a little thicker and the mixture becomes lighter and creamier. The water should not boil, otherwise, the egg yolk will curdle. Cut the vanilla pod lengthwise and scrape out the seeds with the end of a spoon. Add the seeds to the mixture and mix well. Normally, at this point, you would cool the mixture over an ice bath, but in my opinion, you can skip this step. Instead, let the mixture cool a bit and it will still become creamy. Whip the cream until stiff and add it gradually to the cooled mixture. Make sure the mixture is cooled before adding the cream, so that the cream will not collapse. Finally, add the channel liquor to the mixture, and depending on whether you want it with or without alcohol, adjust the quantity.

During the strawberry season, I like to make a quick sauce from fresh strawberries to go with the dessert. For this, mix the strawberries with some powdered sugar and vanilla, and if you want, add a splash of lemon juice. Blend the mixture and strain it through a sieve to remove the seeds. If you have more time, you can also cook the sauce to make it last longer. I usually make such sauces by feeling, so I don’t have exact quantities for you at the moment. Pour the mixture into a muffin tin or a fresh-lock box and freeze it for several hours or overnight. Before serving, let it thaw a bit so that it becomes easier to remove from the container. You can also add some strawberry sauce to the center of the dessert or top it with some fresh strawberries.
