Today I will show you how to make layered meat in the grill pan, which is actually something that you make in the oven. I don’t know if you’re familiar with this cast iron job that you use outdoors, but it is very delicious and you must try it because it is similar to pulled pork, very tender and tasty. For this recipe, I got one kilogram of pork shoulder and now I am cutting it into thin slices. I am using another knife because the first one doesn’t seem to be sharp enough. Make sure not to cut it too thick because you want it to fit in the pan without overlapping too much, which could cause it to burn on top during the long cooking time.

I rubbed the meat with some dry seasoning a day before, and vacuum packed it, so the seasoning could penetrate it better. If you have a smaller Optigrill, adjust the amount of meat accordingly. Now we start to build the layers in the pan. First, we lay down some bacon, just slightly overlapping. Make sure you have bacon throughout the pan, as it will contract during the cooking time. Then add a layer of onion rings, evenly spread. Finally, place the sliced meat next to each other in the pan making sure it is one layer. There is no need to overlap them. Then, place another layer of onions and then cover everything with barbecue sauce. Be generous with the sauce, as it will help to create the delicious taste you are looking for. Top it all off with another layer of bacon.

The grill pan goes into your Optigrill, set to manual mode at around 150-160 degrees Celsius, and close the lid. Check on it after two hours and let it cook further to your desired tenderness. After two and a half hours, I took it out, and it looked and smelled amazing. The color was perfect, and the sauce looked delicious.

I took a piece of meat out and pulled it apart, just like pulled pork. The result was incredible. The meat was juicy and tender, and the taste was amazing. I decided to make a burger with the meat and added some coleslaw on top. It was so delicious that I didn’t need anything else.
