Hey and welcome to Bug Welt! Today, I’m going to show you how to make a simple blueberry cake that is super easy to whip up and tastes amazing! So, let’s get started and have fun making it.
First, I’ll take 450g of fresh or frozen blueberries, 300g of flour, 2 teaspoons of baking powder, 200g of margarine or soft butter, 150g of sugar, 1 packet of vanilla sugar, 470ml of milk, 1 teaspoon of cornstarch, and half a lemon.
I’ll start by beating the margarine with the sugar and vanilla sugar until creamy. Then, I’ll add the eggs one by one and mix them well. In a separate bowl, I’ll mix the flour and baking powder and then add them to the butter mixture, alternating with the milk. Finally, I’ll add the juice of half a lemon and mix well.
Next, I’ll wash the blueberries with cold water and dry them. I’ll coat them gently with cornstarch to prevent them from sinking to the bottom while baking.
I’ll preheat the oven to 180°C and line a 26cm springform with parchment paper. I’ll pour half of the batter into the pan, spread it evenly, and add half of the blueberries on top. Then, I’ll pour the remaining batter over the blueberries, making sure they are covered. Finally, I’ll add the remaining blueberries on top, making sure they don’t overlap.
I’ll bake the cake in the preheated oven for about 40 minutes until it’s golden brown. After it’s baked, I’ll let it cool completely and then carefully transfer it onto a cake plate using a cutting board. Finally, I’ll sprinkle powdered sugar on top of the cake.
