For me, a pasta sauce must be creamy and everything must be well combined, both the pasta and the sauce. All ingredients must be well integrated. Usually, creamy sauces are achieved by adding cream, but I believe that cream has no place in pasta sauce. Therefore, I will show you three sauces in this video that everyone can easily make at home, and none of them contain cream.
The first sauce we will make is called “Mantu” in Turkish, which means “fake meatball” when translated. We are basically making a sauce but adding noodles to it, hence we call it “fake meatball sauce”. This saves a lot of effort and time. I have made a video for this recipe, which I will upload soon.
To make the sauce, we start with melting butter in a hot pan, and let it completely melt. As the sauce only consists of yogurt and some herbs and spices, it is one of the cheapest sauces in the world. We add a small tablespoon of tomato paste, and let it cook for a while on medium heat. We can add a little less tomato paste if desired.
Next, we add a teaspoon of salt, chili powder (careful with the amount if you don’t like it too spicy), dried mint, black pepper and mix everything together. We must be careful not to let the spices burn, so we stir the mixture for a short time. Once everything is combined, we can remove the pan from the heat.
In order to make the sauce thick and creamy, we need a little bit of pasta water. We take about two ladles of pasta water, which is approximately 100 milliliters, and add it to the sauce. We then add the cooked pasta to the sauce and stir everything together. We also add one clove of garlic to the sauce, which we can also add to the yogurt or not.
Our secret ingredient is homemade yogurt. I have already posted a video about how to make homemade yogurt. Turkish people cannot live without yogurt, and we put it in every dish, especially in this sauce. It makes the sauce so much healthier and tastier.
The second sauce we make is Spinach Pesto. Pesto basically means mashed in Italian, and there are many different types of pesto. Pesto basilico is the most popular, as basil is a very common plant in the Mediterranean region, especially in Italy. Spinach pesto, on the other hand, has a more intense green color, which I find very appealing.
To make the pesto, we need a lot of spinach, which we will puree until it is smooth. It is essential that we achieve a creamy consistency, so we add olive oil, garlic, pine nuts, salt, and fresh ground pepper. Afterwards, we add grated parmesan cheese and continue blending, until the pesto is perfectly smooth.
For the third sauce, we make Josh Peck’s Alfredo sauce. This is one of the most unusual but amazing sauces I’ve ever tasted. Originally, this recipe is not very well-known in Italy, as it was only served in one restaurant and then became famous all over the world.
To make the sauce, we start by grilling chicken breast in a cast iron pan. We turn it over once it easily comes off the pan, as this will give it a nice and crispy texture. Once the chicken breast has been thoroughly cooked, we cut it into pieces and we add in butter and parmesan cheese to make the Alfredo sauce.
We take our cooked pasta and add it to the sauce, with some pasta water. We stir everything together until we achieve a creamy consistency.
In conclusion, there are many ways to create a creamy pasta sauce without adding cream. Using yogurt or cheese and butter can make a sauce just as enjoyable, if not more so. These three sauces are easy to make and highly recommended.
