Asian cuisine is unbeatable when it comes to taste and quick recipes. Today, I want to share with you three delicious Asian recipes that are perfect for lunch at home or even in the office. These recipes are easy to make and will impress your guests. So why not make a double batch of each!
Let’s start with recipe number one - stir-fried noodles with green veggies, fresh coriander, peanuts, and sesame seeds. To make the sauce, squeeze the juice of half a lemon, add two tablespoons of maple syrup, two tablespoons of tamarind soy sauce, and a splash of water. Mix everything together and set it aside. Cut two onions into slices and chop a piece of ginger. We’ll need this for the green part of the recipe. Cut the broccoli into small pieces and reserve a portion for later to mix it in at the end. Cut the rest into thin strips, including the stem. We need an enzymatic named myrosinase to better process the sulforaphane from the broccoli, so keep one part of the stem separately. We’ll add this later.
Boil the noodles until they are done. Rinse them with cold water to prevent sticking and add a bit of oil to prevent them from sticking. Melt a decent portion of clarified butter in a pan and fry the onions, ginger, and garlic until they are golden brown. Add the broccoli, white part of the pak choi, and sugar snap peas. After a few minutes, add the green leaves from the pak choi and wait until they have wilted. Finally, add the noodles, sauce, reserved broccoli, and a generous portion of sesame seeds.
For the second recipe, we’ll make peanut sauce. Grate some ginger and lime zest (use organic limes) and add it to the blender. Add two tablespoons of roasted sesame oil and three tablespoons of unsweetened peanut butter. Mix everything together and add some Tamari soy sauce and some maple syrup. Add water until it is smooth.
For the salad, finely chop three spring onions, julienne the cucumber, and grate the carrot. Cut a lively pepper into thin strips, put everything together in a large bowl, and mix thoroughly. Blanch the edamame beans and roast the shiitake mushrooms in a pan. Add the mushrooms, beans, and peanut sauce to the salad, and sprinkle some fresh coriander and peanuts on top. Done.
The third recipe starts with small diced ginger, garlic, and a red chili. Cut two stalks of lemongrass into fine pieces, finely chop the coriander root and leave it to marinate in the fridge. Portion the meat (chicken, pork, or beef) into cubes and add it to the marinate. Mix everything together and let it sit for a while.
Heat up a pan, add some oil, and fry the meat until it’s brown from all sides. Add the remaining marinade to the pan and reduce the heat to low. Let the meat cook slowly until it’s tender, and then add two tablespoons of fish sauce, some lime juice, and brown sugar to the pan. Cook for another minute and turn the heat off.
Serve everything with steamed rice, sprinkle some fresh herbs and roasted peanuts on top, and enjoy.
