Today we are making Tepsi Börek with ground beef in Ahmet’s kitchen, and this video is sponsored by Redground. We begin by making the dough for the Tepsi Börek. Ahmet adds 300 milliliters of warm water, 7 grams of dry yeast, a tablespoon of sugar, 600 grams of flour, a tablespoon of salt, and some oil to the mixing bowl. He runs the machine until the dough is formed and leaves it to rest for 30 minutes.

Next, Ahmet moves on to the filling. He has 400 grams of ground beef, 150 grams of grated cheese, 100 grams of chopped onions, 100 grams of diced bell peppers, 2 cloves of garlic, salt, pepper, thyme, oil, and margarine. He sautés the onions in oil and margarine for 7 minutes and then adds the rest of the ingredients.

After the dough has rested, Ahmet rolls it out to fit a baking sheet that he has oiled or lined with parchment paper. He spreads the filling over the dough and tops it with another layer of dough. Ahmet then spreads some beaten egg yolk mixed with yogurt on top and sprinkles some sesame seeds before baking it in a preheated oven at 200 degrees Celsius for 25 minutes on the middle rack.

Finally, after the Tepsi Börek has cooked, Ahmet removes it from the oven and allows it to cool before he cuts it into small pieces. He serves it hot, garnished with some chopped parsley and a dollop of yogurt.
