However, Kiki shows us a modern twist with her recipe, which uses minced beef and basic ingredients that most people already have at home.

To start, she grates onions finely using the fine side of a vegetable grater, ensuring a delicious mouthfeel. Then, garlic cloves are added and mashed using a garlic press or finely chopped. This is followed by salt, pepper, and finely chopped parsley, which is optional but adds a delicious flavor.

The three key ingredients that make the meat juicy, tender, and delicious are baking powder, sweet paprika powder, and pul biber or paprika flakes. Kiki uses a combination of both spices to provide just the right amount of spiciness without being too hot.

Now it’s time to knead the meat mixture for a long time until it comes together. It will gradually change in consistency, and as you continue to knead, you won’t need any eggs or breadcrumbs. The meat mixture needs to be covered and left in the fridge for at least an hour, allowing the spices, garlic, and onions to develop their flavors.
