Alia Grund – Welcome! Today, I want to show you how to make royal icing and how to further process and use it in your baking. First, you’ll need a big bowl and one of the main ingredients is powdered sugar. I always keep a big supply of it on hand and the brand doesn’t really matter as I haven’t had any issues so far.
Generally, the rule is to use one egg white for every 200 grams of powdered sugar, but today, I need a lot of icing, so I’m using 400 grams of egg whites. If I need a thousand grams for a bigger project, I’d use 5-1. Yes, it’s 420 grams, but that’s okay, and I’m too lazy to measure exactly.
Next, we need fresh egg whites as we’re not baking them. I recommend using organic eggs, as I’ve found that fresh eggs may not work well, especially if you have kids in the garden. For my 420 grams of powdered sugar, I’ll use about 218 egg whites or the equivalent of one carton. If you don’t use raw egg whites, you can find meringue powder, also known as merengue powder or egg white substitute, in a specialty store or online.
Now, it’s time for the mixer to do some work. At first, the icing may be syrupy, but as you mix it longer, it will become homogenous and white. If your icing is too runny like mine, because I took on too much, add a few drops of lukewarm water. If it’s too thick, don’t add more powdered sugar. Test the consistency by running a knife through it. It should settle in about 10 to 12 seconds and the surface should quickly become smooth.
If you need a colored icing, take a separate bowl, unless you want to mix the whole batch. Fill the new bowl with the amount of base icing you want to color. I don’t have good judgement when it comes to the amount of icing I need, so I always make extra. Add water until you reach the desired consistency, which should be runny and settle in about 18 seconds or longer, depending on the project. Add gel food colorings, which are better to use than liquid food coloring as they won’t alter the consistency of the icing, and mix it by hand until a smooth color is achieved.
Remember that darker colors like black, red and blue require more food coloring, and this can affect the taste of the icing. Also, the colors will deepen as they dry. If you’re unsure about the color, cover the bowl with a piece of foil and let it sit for a while so the color can develop. You can always adjust it later. Once you have the desired color, fill a piping bag with the icing and start decorating.
