I thought it would be appropriate to celebrate this by sharing a recipe for bread that is perfect for this occasion.

Let’s get started. For our bread, we will need 250 grams of type 630 spelt flour, 250 grams of spelt wholemeal flour, and 10 grams of salt. You can use wheat flour instead of spelt, and the exact recipe is available in the video description. We will also need some buttermilk, water, yeast, and some bread spices. We’re using a teaspoon of coriander seeds, a teaspoon of fennel seeds, and half a teaspoon of caraway seeds, but you can adjust this according to your taste.

Mix all the dry ingredients together and then add the liquid ingredients, along with the bread spices. Knead the dough for about five minutes, using your hands or a kneading machine. Don’t knead for too long, as the acidity of the buttermilk and the wholemeal flour will do most of the work for you. Leave the dough to rest for an hour at room temperature, so the yeast can start working.

After an hour, put the dough in a basket lined with a linen cloth, sprinkle some flour on top, and then put it in the fridge for at least eight hours. You can leave it overnight or for longer, if you want. Once you’re ready to bake, preheat your oven to 250°C and put a cast iron pot with a lid in the oven to heat up. When the oven is hot, carefully take the pot out and put the dough in it, using the linen cloth as a handle. Put the lid back on and bake for 30 minutes. Then remove the lid and bake for another 20 minutes, until the bread is golden brown and crusty.

Take the bread out of the pot and let it cool down for a while before slicing it. And there you have it – a beautiful, delicious bread that you can enjoy on any occasion.
