To begin, I’m starting with our game. I got this from Adventure, a German meat supplier that only carries regional products from Germany. If you have access to a local hunter, you could also get the game from them. We also need a variety of root vegetables like onions, leeks, carrots, and celery. These just need to be roughly chopped. We also need tomato paste and wild cranberries for flavoring. For spices, I have cinnamon, juniper berries, and peppercorns. We also need bay leaves, fresh garlic, salt, and pepper. The liquid components consist of a wild stock and grape juice. Alternatively, you could use red wine, which pairs well with game, but I think grape juice works better in this dish. Finally, we have a tea bag for the spices.
Once everything is chopped, we have to prepare the meat. I remove the silver skin from the meat so that it doesn’t interfere with the texture of the dish. Then we heat up some oil in a pot or Dutch oven and brown the meat in batches. Next, we add the vegetables and sauté them for a few minutes before adding the tomato paste. We let that cook for a few minutes before adding the grape juice and reducing it. After that, we add the game stock and let it come to a boil, adding the spices and the cranberries. Then we simmer everything on low heat for 90 minutes, adding liquid as needed.
