To start, I needed to fillet the fish using a good filleting knife. I had to be very careful as I used a knife with a bendy blade, which can be very dangerous. Using a towel to grip the fish is always handy.
After filleting the fish, I needed to separate the meat from the skin. I followed the skin with the knife to do this, so I was left with beautiful fillets of fish, which I then cut into smaller pieces and minced. Because carp has a lot of bones, I ground up the fish twice to make sure they all were adequately ground, so they wouldn’t be detected when eating the patties.
