These are my absolute favorite tacos filled with chicken in a chipotle marinade – unbelievably great recipe and super easy to make. On top of that, a little bit of lime cream and many other tasty things. It’s best to prepare the marinade in advance. For that, I use three tablespoons of olive oil, one tablespoon of ketchup, one tablespoon of Dijon mustard, one tablespoon of apple cider vinegar, and one tablespoon of lime juice. I add 80 grams of honey, to make it nice and sweet. I also add some cilantro, about a teaspoon of coriander spice, a teaspoon of oregano, and a little bit of salt. If you like it spicy and love that wonderful chipotle flavor, you can add a chipotle chili in adobo sauce. You can also try adding a hint of smoked paprika powder, which enhances the smoky aroma.
Mix all the ingredients well, take about two tablespoons of the marinade aside, and coat the chicken breast. I take three chicken breast fillets and put them in the marinade. I let them soak in the fridge for at least two hours or overnight if possible. When the chicken is marinated, take it out of the fridge, and it smells so good. I’m already excited to eat this tasty dish.
Now, let’s make some lime cream. I mix 200 grams of sour cream with two tablespoons of mayonnaise. Then, I add a little lime juice, around half of the lime. Add salt, pepper and two spices that give it a lot of flavor: cumin and garlic powder. Mix it all together and adjust the seasoning to your taste.
To prepare the toppings, I cut the avocado into small cubes. Simply pre-carve into a cross shape and then dice the avocado. For the onion, I cut it into very fine cubes. I chop the Jalapeno into small pieces, removing the seeds, so as not to make it too spicy. Lastly, I slice some cherry tomatoes and chop the coriander.
Now it’s time to cook the chicken. Preheat a pan, add a tablespoon of peanut oil, and put in the chicken breast that has already marinated. Make sure it’s coated with the marinade and cover it with a little aluminum foil. Flip it over when one side turns golden brown, and add the reserved marinade again to provide more juice and flavor.
When everything is prepared, it’s time to assemble the tacos. Take a tortilla, add some chicken, lime cream on top of it, and add the toppings you like, depending on your preferences. For me, I love to add some onion, jalapeno, avocado cubes, cherry tomatoes, and coriander leaves.
