Today I have a brilliant recipe for you that you can whip up in just five minutes. This wonderful peanut butter sauce is super easy to make and is a great recipe for kids. In today’s video, I will show you how to make this quick and easy recipe.
The best thing about this recipe is that it is super quick to make. First, we start with two onions, peel and dice them into small pieces. Then, chop the garlic into small pieces as well. It doesn’t have to be super fine, rough pieces work just fine. Preheat a pan on medium heat, add a bit of peanut oil, or any other oil you have at home, and add the onions and garlic. Because I have cut the garlic into bigger pieces, there is no need to worry about it burning. Burnt garlic can be quite bitter, which can ruin the taste of the dish. Cook the onions and garlic for about two to three minutes until they become translucent.
While the onions and garlic are cooking, you can start cooking rice, lentils, or couscous for the dish. Personally, I prefer jasmine rice, which I cook with twice the amount of water. Add salt to the water and let it boil until all the water has been absorbed.
Next, prepare the tomatoes. I like using cherry tomatoes because they have a sweet flavor, but any kind of fresh tomato or even canned tomatoes will be fine. Cut the tomatoes into small pieces and add them to the pan with the onions and garlic. Add a little bit of cumin to the dish for a bit of flavor.
While the dish is cooking, you can chop up some parsley. It is optional, but I like the touch of green it adds to the dish, and it goes well with the flavor of the dish.
The next ingredient is kidney beans. They are super cheap, healthy, and filling. You can add one can of kidney beans, drained, to the pan, and mix it in with the tomato mixture. Add two teaspoons of Sambal Oelek chili paste to the dish to give it a spicy kick. If you don’t have this particular chili paste, you can substitute it with any chili sauce you have at home.
Finally, we come to the star ingredient of the dish, peanut butter. Add two tablespoons of peanut butter to the mix and let it melt in. If the sauce is too thick, you can add a bit of water to thin it out.
That’s it. Our dish is ready. Serve the peanut butter sauce mixture over the cooked rice, and sprinkle some parsley on top. It is a delicious, easy to make, and healthy vegan dish that can be made in just under 30 minutes.
