Hello my dear friends of good taste, today I have a wonderful autumn recipe for you, namely a pumpkin pasta. We will make a pasta sauce from this beautiful pumpkin with mascarpone, lemon and some other super simple ingredients. I’m sure that after watching this video, you will want to make this recipe immediately, because it’s really delicious!

I have a beautiful Hokkaido pumpkin here. Why Hokkaido? Because the skin of this pumpkin is edible, so I recommend that you buy an organic pumpkin. That’s what I always do and I’ve never regretted it.

Firstly, we need to cut the pumpkin into small pieces. When cutting the pumpkin, always be careful, as these things can roll pretty easily. If you want, you can cut off one end of the pumpkin so that it lies flat, which will help you to cut it more easily. You can then cut it in half and scoop out the seeds with a spoon. Then cut the pumpkin into cubes.

Next step is to preheat the oven (200 degrees Celsius on convection). Place the pumpkin cubes on a baking sheet and drizzle some olive oil over them (2-3 tablespoons). Add some garlic cloves (you can simply press them with a fork and leave the skin on) and mix everything well. Roast the pumpkin in the oven for 20-25 minutes until it’s soft.

In the meantime, you can cook the pasta in salted water until it’s al dente. Reserve some of the pasta cooking water for the sauce.

Once the pumpkin is cooked, puree it in a blender or food processor. Add salt, pepper, coriander seeds or powder, chili flakes, cumin and cinnamon or nutmeg to taste. Then add mascarpone, lemon zest and juice and blend everything together. If the sauce is too thick, add some of the reserved pasta water to thin it out.

Once you have cooked and drained the pasta, mix it with the pumpkin sauce. Serve it hot with some of the reserved roasted pumpkin cubes on top.
