Firstly, we need rice, and I have already prepared it. Rinse it thoroughly to remove the starch and prevent it from getting too sticky. However, if you like it sticky, you can skip this step. Then, cook it in salted water while we move on to prepare the chicken.

I will cut the chicken breast into bite-sized pieces and fry them in some coconut oil. Coconut oil is a good option for high heat frying as it doesn’t burn easily. However, you can also use butter if you prefer. Add some salt and pepper to season the chicken during frying.

Next, add in some chopped spring onions and fry them with the chicken for a minute or two. After that, let’s add in some vegetables such as carrots, peas, and mushrooms. I prefer using fresh mushrooms, but you can also use canned ones. Unfortunately, asparagus is out of season, so I will skip it this time.
