Hello my dear, welcome back to Level Kopf. Today we’re going to make something festive, a baked apple with vanilla sauce. For that, we’ll need some vanilla pudding, and I’ll link a recipe for that above. We also have some fresh vanilla sugar, a cloudy apple juice, a bit of rum (optional), marzipan, star anise, a cinnamon stick, butter, sugar, and some Boskop apples. You can also use other types of apples if you prefer.

First, we need to mix the marzipan with some vanilla sugar and a bit of rum. If you’re making this for children, skip the rum. We’ll also add some apple jam and mix everything until smooth.

Next, we need to prepare the apples. Cut off the top of each apple and scoop out the core, leaving a hollow center. Cut the pieces you scooped out into small strips and set them aside. Rub the inside of each apple with some soft butter and coat with sugar. Stuff each apple with the marzipan mixture and the reserved apple pieces, making sure to fill them up all the way to the top. Sprinkle some extra sugar on top.

Now, we need to make a sweet syrup to bake the apples in. Mix some apple juice with some rum, star anise, cinnamon, and butter, and heat until the butter is melted. Pour the syrup into a baking dish and place the stuffed apples on top. Bake in the oven at 160-180°C for 35-40 minutes, or until the apples are tender and caramelized.

While the apples are baking, we can make the vanilla sauce. Follow the recipe for vanilla pudding and add some milk to thin it out to a sauce consistency. Serve the baked apples with the vanilla sauce on top.
