I have been here for the ninth time now, and every year I come here at least once because there are so many great things: agriculture, nature, and so much more. I want to take you with me and show you how to make the world’s best and healthiest syrup: my holla syrup. We will simply harvest it and then I will show you how to make it. You will have fun and joy for a whole year!

The holla, or elderflower, can be found almost everywhere. To find good holla, it is important to look for bushes that are in the sun and have water nearby. To harvest the holla, you should wait until the flowers are dense and have those little yellow roxel on them. When you shake them, a lot of this neon yellow pollen comes out. This is what makes the syrup so delicious.

To make the syrup, you need holla flowers, water, oranges, lemons, sugar, and citric acid. First, clean the holla flowers and remove any insects that may be inside. Then, mix the flowers with water, sliced oranges and lemons in a large glass jar. Let the mixture sit for three days, stirring occasionally. After three days, drain the mixture through a cheesecloth or strainer, making sure to squeeze as much juice as possible from the flowers.

Next, add the sugar and citric acid to the juice and mix well. Let the mixture sit for half a day to make sure the sugar and citric acid dissolve completely. Then, pour the syrup into airtight jars and store in a cool, dark place. The syrup can be diluted with water to make a delicious and refreshing drink.
