It’s going to be really delicious, and I’m already looking forward to it. First, we’re going to make a marinade using a lot of spices. We have paprika, sweet paprika powder, coriander seeds, thyme, salt, pepper, chili flakes, garlic, onion, and good quality olive oil. We’re going to put all of these ingredients into a mortar and grind them up. The coriander seeds have a really strong and unique flavour, and it’s important to crush them up properly so that they release their full flavor. After putting all of the ingredients into the mortar and grinding them up, we’ll mix in the olive oil and give it a good stir. This will create a thick and flavourful marinade that we’ll use to marinate our chicken.

Next, we’ll prepare our chicken. We’ll use chicken legs because they are less likely to dry out than chicken breasts, but you can use whatever you prefer.
