The theme of today’s episode of Sally’s Welt is a delicious cake, a recipe requested by Murat. He wanted a No-Bake cake with Butter biscuits but Sally had a better idea to create a cake with a biscuit base, a fruit layer, pudding and whipped cream. Sally suggests that those who prefer a No-Bake cake can omit the biscuit layer and make a refrigerator cake, which is equally delicious.

Sally starts by making the biscuit base for the cake, and she uses four eggs, 100 grams of sugar, vanilla extract, a pinch of salt, and 100 grams of flour. Sally prefers Vollkornbutterkeksen, but she uses normal butter biscuits this time. She discusses her love for dipping biscuits in her childhood tea, but she warns against over-dunking them, as they might end up falling into the tea and making it taste disgusting. She uses an electric mixer to beat the eggs to a creamy consistency, and she sieves the flour into the mixture using a whisk. Sally then lines the base of her circular baking pan with butter biscuits and spreads the biscuit mixture on top of them. She bakes it in the oven for 11 minutes.

Once the biscuit layer is cool, Sally starts preparing the fruit layer. She uses a mixture of raspberries and redcurrants from the freezer, but fresh fruit can also be used. Sally suggests that the fruit can be chunky or pureed, depending on preference. She uses 350 grams of fruit, 30 grams of sugar, 5 grams of agar-agar, 100 grams of water, and a little bit of Tonka wonka to refine the mixture. Tonka wonka is similar to vanilla and adds a lovely flavour to the fruit. Sally boils the mixture for two minutes to activate the agar-agar, which is a plant-based gelatin substitute.

After spreading the fruit layer on top of the biscuit layer, Sally prepares the vanilla pudding using two egg yolks, 45 grams of starch, 40 grams of sugar, vanilla extract, and 500 grams of milk. She mixes the egg yolks, starch, and sugar, and adds a little bit of milk, before adding it to the rest of the milk in the pot. She stirs the mixture on low heat until it thickens and bubbles, then pours it over the fruit layer.

Finally, Sally adds whipped cream on top of the pudding and decorates the cake with fresh raspberries and redcurrants.
