Today, I have a very special guest with me – the cake fairy Lisa! (*applause*) Lisa is well-known on YouTube and Instagram as an incredible pastry chef, and I admire her greatly. I actually met her yesterday at the Christmas market in Hamburg, and I couldn’t resist asking her to come and cook with me. So, here we are – welcome to Kalle Cooks! Lisa, what are we making today?

Today we’re making coconut macaroons – without the coconut! (*laughs*) Okay, so what do we need for this recipe? We really only need three ingredients: egg whites, shredded coconut, and sugar. And the wafers are optional – if you don’t have them, you don’t need to buy them, you can still make the macaroons without them.

The recipe is listed below, so we just need to warm up our ingredients over a water bath. You can find all the recipe details in the description box of this video. I’m a bit nervous, to be honest with you, Lisa!

(*laughs*) Don’t worry, we got this. So, let’s start by setting up our water bath. You did a great job with that already. Just pour a little water in a pot and place a bowl on top, making sure the bowl is half in the pot. Then, we’ll add all three ingredients to the bowl and slowly warm them up to 70°C. This will make the macaroons safe to eat, as the eggs will be cooked.

I thought we needed to whip the egg whites first. (*laughs*)

Nope! We’ll mix everything together over the water bath, and once the sugar dissolves and the ingredients become smooth, we’ll continue with the recipe. We want the mixture to be warm, but not boiling. If it gets too hot, the egg whites could cook too quickly and change the texture of our macaroons.

You’re the expert! So, now we can mix everything together, right?

Exactly! You can add the sugar first if you like, or the coconut – the order doesn’t matter. Just mix the ingredients with a spoon or a spatula until they become a smooth, thick mixture. We’ll keep heating it up for a few minutes until it gets warm enough, and then we can move on to the next step.

Lisa, you’re the queen of pastry, and I’m sure you’ve made macaroons before. How long does it usually take for the mixture to get warm enough?

It should only take a few minutes, but you don’t need to be too precise. If you don’t have a food thermometer, you can just touch the mixture with your finger – it should be hot, but not so hot that you can’t touch it.

That’s great! Now we have our basic macaroon mixture ready. Lisa, you have a lot of experience in traditional baking techniques, and you can turn simple ingredients into something magical. Well, coconut macaroons are pretty simple to make, but I would recommend using fresh, shredded coconut if possible. It has a better flavor than packaged coconut flakes.
