Musik - Hello and welcome to BAP Cape Wind. For me, it’s definitely Kaiserschmarrn time right now, and that’s why I’m going to show you today how I make Kaiserschmarrn. Earlier, I used to make it simply in a pan, because, you know, sometimes there’s a problem where it gets overcooked outside and remains liquid inside. And so, I’ve made it easier today - we’re going to make the complete dough for the Kaiserschmarrn in the oven and then caramelize it shortly in the pan later. This way, there’s less stress and it’s also a super easy recipe.
To make the Kaiserschmarrn, we need 130 grams of flour, 250 milliliters of milk, separated egg yolks and egg whites, 50 grams of sugar, a tablespoon of vanilla sugar or a packet of vanilla sugar, a pinch of salt, and 50 grams of butter. And to caramelize the Kaiserschmarrn in the pan, we need about 25 grams of butter and two tablespoons of powdered sugar.
So first, we’re going to take an oven dish with dimensions of 32 x 24 and put it in the oven at 200 degrees Celsius with top and bottom heat. While that’s heating, we’ll beat the egg whites with sugar and a pinch of salt until stiff. Then, we’ll mix the flour, milk, and sugar until free of lumps and then add the egg yolks.
Now, we’ll take our egg white mixture and carefully fold it into our flour, milk, and egg mixture. The goal is to keep as much air as possible, but make sure it’s mixed in well. Then, we’ll take our heated oven dish out of the oven, add the butter, and put it back in until the butter has melted. Then, we’ll spread out the mixture evenly in the dish and bake it for 8-9 minutes, depending on your oven.
Next, we’ll take it out of the oven and quarter the dough, turning them over and baking them for four more minutes. Then, we’ll caramelize the Kaiserschmarrn by heating up an oven in the pan and adding the remaining butter and powdered sugar. We can also add some apples or other fruits if we want.
This recipe is super easy and yields phenomenal results. The Kaiserschmarrn is light and fluffy, and the powdered sugar and caramelization make it even more delicious. Plus, the oven takes care of most of the work, so there’s less stress and easier clean-up. Try it out and let us know how it turns out!
