Welcome to my world of cakes! Today I am going to share with you a quick recipe for bruschetta, but not the traditional Italian version. Instead, I will be making the Sally version, which I briefly showed you a few years ago during a Christmas menu. Since many of you have been asking for the recipe, I thought it was a good idea to make a separate video about it.

I often make bruschetta as an appetizer or as a side dish, especially when I have guests coming over for a BBQ. For this recipe, I am using an old baguette, which is perfect for bruschetta. It doesn’t matter if it’s a little stale or moldy, as we will be toasting it in the oven anyway. I am going to make a large batch today, about 2-3 trays, depending on how many guests we have.

To make the garlic butter, I am using 60g of butter, 40 ml of olive oil, half a teaspoon of salt, half a teaspoon of basil, a pinch of chili, and some oregano. I also have four tomatoes, which I will dice and mix with a tablespoon of balsamic vinegar, a tablespoon of balsamic cream, a pinch of salt, and some pepper.

First, I am going to slice the bread, not too thin or too thick. I like to spread a thin layer of garlic butter over the bread, making sure to cover every corner. Then, I place the bread on a baking tray and toast it in the oven at 200 degrees Celsius for about 5-6 minutes, until the edges are golden brown.

While the bruschetta is toasting, I dice the tomatoes and mix them with the balsamic vinegar, balsamic cream, salt, and pepper. I also like to add some oregano or basil for extra flavor.

Once the bread is toasted, I take it out of the oven and let it cool for a minute or two. Then, I spread the tomato mixture over the bread and serve it immediately.

Bruschetta is such a versatile dish that you can make it with any toppings you like. You can use different kinds of cheese, meats, vegetables, or even fruits. It’s perfect as an appetizer, side dish or even as a light meal. Plus, it’s so easy and quick to make, which is perfect for those busy weeknights.
