I am Carlos Martinez and together we will explore one of the most famous dishes in Valencia - paella. Although many claim that their version of the dish is the most authentic, the main ingredients of this traditional dish include chicken, rabbit, tomatoes, green beans, short-round rice (bomba), white beans, artichokes, olive oil, chicken or vegetable broth, lemon, and salt. However, depending on the region, additional ingredients such as duck, snails, or garlic may be added.
To begin making paella, heat some olive oil in a flat pan while preparing the ingredients. Cut the chicken and rabbit into small pieces, along with the tomatoes and green beans. Rinse the short-round rice and set aside.
Add the chicken and rabbit to the hot pan and fry until the meat is browned. Add the minced garlic and stir until fragrant. Push the meat to the sides of the pan and add the artichokes to the center. Once the artichokes are slightly softened, add the green beans and stir together.
Sprinkle some smoked paprika over the ingredients and add chicken or vegetable broth. Let the mixture simmer for a few minutes before adding the rice. Mix the rice into the broth and let it cook on high heat for about 10 minutes.
After 10 minutes, reduce the heat to medium and cook the rice for another 6 minutes. after 6 minutes, reduce the heat to low for one more minute. The total cooking time for the rice should be no more than 16 minutes.
Once the rice is cooked, remove the pan from the heat and cover it with foil. Let the dish rest for a few minutes before serving. Garnish with lemon wedges and enjoy this delicious and fragrant dish.
