Now, we need to chop a red onion into small dice. We’ll sauté the onion in butter until it’s translucent. You could use lard instead of butter, but I prefer the vegetarian option. Here comes the highlight of the recipe: marinating the red cabbage. First, add some red port wine, followed by white port wine and balsamic vinegar. Next comes the secret ingredient: a few drops of walnut oil. Add a pinch of sugar, a teaspoon of salt, and a bit of ground nutmeg, and then some apple sauce.
