Hey everyone, today we’re going to make something that will take you back to your last holiday in Spain – Tapas! I have four small recipes that you can make for your own Tapas evening. Let’s start with a recipe that is a wonderful refreshment on sunny days – Gazpacho.

First, we need to peel 4 tomatoes. I know, it sounds complex, but it’s super easy. The trick is to put the tomatoes in hot water for about a minute, then transfer them to cold water. After that, the skin will come off easily. Cut the tomatoes into quarters and put them in a blender. The key to the right consistency of Gazpacho is white bread. Cut off the crust of an old white bread and use only the soft part. Soak it in some water (about 4-5 tablespoons) until the bread absorbs the water.

Now, let’s move on to the vegetables. Dice half a cucumber, two green peppers, an onion, and a small clove of garlic. Keep some of the diced vegetables aside to garnish the soup later. Add the rest of the vegetables to the blender along with the soaked bread, 250ml of tomato juice, a teaspoon of sweet paprika powder, salt, and pepper. Finally, add a good splash of olive oil, and blend everything together.

For the next dish, we’ll make a Spanish omelette - Tortilla. Heat some olive oil in a pan and add sliced onions. Once the onions are nearly caramelized, add diced potatoes and red or green peppers. Cook for a few minutes until everything is tender.

Now, beat 6 eggs in a bowl with some salt and pepper. Add the cooked vegetables to the egg mixture and let it sit for about 10 to 15 minutes. Then, pour the mixture into the same pan and let it cook for about 3 to 4 minutes on one side until the eggs are set.

Flip the tortilla carefully and cook for another 3 to 4 minutes on the other side. You can add peas or chorizo to the tortilla to make it more interesting.

Finally, let’s make some Pimientos de Padrón. This is one of the simplest Tapas recipes. All you need are small green peppers and some olive oil. Heat the olive oil in a pan and add the peppers. Cook them for a few minutes until they are tender and slightly blistered. Once done, sprinkle some sea salt on top and they are ready to be served.
