Italienisches Panini Brot selber machen

Today we’re baking Italian panini bread together, and later I’ll show you my favorite filling: cheese and grilled vegetables. I just couldn’t resist adding a little bit of warmth to our recipe. But first, let’s get started on our dough. I’m using wheat flour, specifically a mix of 1050 and 550 grades, which provides different levels of texture in our final product. We’ll add a little bit of sugar to the water and let it rest for ten minutes. This gives our dough a chance to rise before we add the rest of our ingredients.

Next, we’ll add salt, olive oil, and the remaining water. It’s important to mix the salt and olive oil separately from the yeast, otherwise the salt can kill the yeast. You can find the exact measurements for our recipe on the Heiße Himbeeren website. We’ll knead the dough for about ten minutes until it’s smooth and elastic. We’ll form it into a ball, coat it with olive oil, and let it rise for an hour in a warm, draft-free spot.

After an hour, we’ll take the dough out of the bowl and divide it into equal portions. I’m using my father’s recipe, which makes six paninis. You can adjust the recipe to make more or fewer paninis. We’ll form the sections into balls and let them rest for five minutes. Then, we’ll shape them into long, thin loaves and let them rise for another 40 minutes. Before baking, we’ll brush them with a little bit of water and sprinkle them with sesame seeds.

We’ll bake the paninis for 20-30 minutes at 170 degrees Celsius in a preheated oven. Once they’re cooled, it’s time to fill them. I like to spread fresh cheese on the bottom half, then add grilled vegetables, and top it off with Provolone cheese. Provolone is a firm Italian cheese that’s similar to Mozzarella. If you prefer Mozzarella, it’s a bit more moist, which can make the paninis a little bit soggy.

I also like to add a little bit of olive paste and green pesto on my paninis. If you don’t have a panini grill, you can improvise by heating up a cast iron pan and placing a weight on top of the sandwiches to get those classic grill marks.
