Welcome to a new video where we will be making the best and most delicious Quarkbällchen (cheese balls) together. These cheese balls are extremely fluffy and not hard to make at all. There are just a few things you need to keep in mind when it comes to oil temperature and frying, which I will share with you in this video. Please stay tuned and let’s start with the ingredients and preparation.
For the batter, we will need 2 medium-sized eggs, 120g sugar, 1 packet of vanilla sugar, 250g quark, 2 tablespoons of neutral oil (I’m using rapeseed oil, but you can also use sunflower oil), a pinch of salt, 1/2 packet of baking powder, and 250g of flour. For coating after frying, I have 120g of sugar and some cinnamon. The exact measurements of each ingredient can be found in the infobox below.
Firstly, we will need a mixing bowl and a whisk or an electric hand mixer. Beat the eggs, salt, sugar and vanilla sugar together for about 12 minutes until everything is well mixed. Then add in the quark and oil and mix it well for another minute. Next, add in the flour and baking powder into the mixture and mix it together. You can use a spatula or a whisk to mix it.
Please note, you will need a deep pot to fry the cheese balls so that they don’t stick to the bottom. About one litre of oil is enough for the recipe. The temperature of the oil should be around 160-170 degrees Celsius. If you don’t have a thermometer, you can simply use a wooden stick to check the temperature. When the oil bubbles around the stick, it’s ready.
Now, let’s shape the cheese balls. You can either use a piping bag or a Ziploc bag with a hole cut into it, or you can use two tablespoons to shape the cheese balls. I find using an ice cream scoop helps to make the cheese balls round and uniform. You can use your hands as well but make sure to oil your palms to avoid sticking.
Gently put the formed balls into the oil and fry them for about 7-9 minutes on a low heat. Turn them occasionally with a slotted spoon to cook them evenly. Take them out once they turn golden brown and place them onto a plate covered with a paper towel to absorb the excess oil.
Finally, mix together the sugar and cinnamon, and roll the cheese balls in it. Repeat the process until all the cheese balls are fried and coated. You can store them in an airtight container for a few days.
