In this video, we will be making a Christmas dessert in the café. Personally, I am a huge fan of perfume, as it is super easy to make and has a great, creamy consistency that is perfect for this time of year. The flavor is a perfect fit for Christmas, and for those who are not a fan of cinnamon, you can easily replace it with vanilla.

We will need four fresh eggs, or just the egg yolks, 400 milliliters of chilled cream, 150 milliliters of milk, 150 grams of sugar, and about a teaspoon of cinnamon, or alternatively, a packet of vanilla sugar, or a teaspoon of vanilla extract.

First, we need to separate the egg yolks from the egg whites, as we will only need the yolks for this recipe. The egg whites can be stored in the fridge for a day or two and used later for other recipes. Next, we need a big mixing bowl, where we will mix the sugar and egg yolks together. For some recipes, raw eggs are used, such as in tiramisu, but as long as the eggs are fresh, there should be little to no risk of bacteria.

Now we can add the milk and cinnamon, or vanilla, to the mixture. If you have heated the eggs over a double boiler, be sure to let the mixture cool before adding the whipped cream. If not, we can move on to the next step, which is whipping the cream in a separate bowl. I like to whip the cream slowly and keep it chilled to avoid over-whipping and turning it into butter.

Once the cream has a thick, but still creamy consistency, we can slowly fold it into the egg mixture. Pour the mixture into a silicone mold, or line a loaf pan with plastic wrap, and pour the mixture into it. Freeze for at least six hours before serving.

For the raspberry sauce, we will need 150 grams of frozen raspberries, one tablespoon of sugar, and a teaspoon of cornstarch mixed with water to make it smooth. Heat the raspberries and sugar in a saucepan and add the cornstarch mixture to form a slightly thickened sauce.

To serve, spread the raspberry sauce on the plate and place the frozen dessert on top. You can garnish it with decorative toothpicks or edible paper. The paper can be melted in the oven before serving for an extra decorative touch.

This dessert is sweet, creamy, and has just the right amount of cinnamon or vanilla. It’s a perfect treat for the holiday season, and I highly recommend trying it out.
