In today’s video, I made one of the most delicious soups in the world with lots of vegetables, and a little bit of pasta, which we call minestrone. The best thing about this soup is that you can have it in both winter and summer because you can adjust the vegetables according to the season. For today’s soup, I used zucchini, beans, carrots, and celery.

Now, back to the recipe. I chopped the vegetables into small cubes to make it look more appealing. This year, I have been fascinated with Italian cuisine. I think it’s one of the best cuisines in the world, and the ingredients are easily accessible. I have also watched some of Nigella and Jamie Oliver’s videos and hope that they discover me someday. Back to the soup, I love green beans; they are one of my favorite vegetables. However, you need to be mindful of their origin as some come from far away places. In the summer, you can get them locally, which is great for the environment.

I forgot to mention that I also wanted to add celery sticks, but I only had knobbly celery in my fridge. However, I think it will taste amazing because I always say, “If it looks colorful, it will taste good.”

Now, let’s move on to the soup. I started by sautéing onions and garlic, then added the vegetables and some Italian sausage. However, you can make it vegetarian or add pancetta. The soup is perfect for the little ones and easy to make.

While the soup simmered on the stove, I prepared the topping for the soup by mixing parsley, fava beans, and parmesan cheese. I have to mention that you should never throw away parmesan rind, but instead, save it for soups like these.

The soup is now ready, and it looks so delicious. The best part is that you can use any short pasta for this recipe. I will be using little pasta shells. I also added a little bit of chili for some heat.

Finally, the soup is ready to be served, and it looks so colorful and healthy. If you have guests over, this soup would be perfect to make. I hope you enjoy this recipe as much as I did making it.
