Hello my dear and welcome to a delightful video. I am pleased that you have tuned in again. Today is not Thursday, it is Sunday but it is also St. Nicholas Day. To mark this occasion, I thought I’d share with you a super delicious recipe, we will be making filled gingerbread hearts. Personally, I love the store-bought ones, but I thought why not try making them ourselves, and that’s exactly what we’ll be doing today in this video.

So, let’s get started. For the gingerbread dough, we will need molasses, brown sugar, vanilla sugar, baking powder, unsweetened cocoa powder, cinnamon, gingerbread spice mix, a pinch of salt, and butter. You could replace the molasses with honey if you prefer.

In a small pot, I am first adding the molasses, brown sugar, vanilla sugar, a pinch of salt, and butter. I am heating these ingredients until they are well combined. Once this is done, I am setting aside the mixture.

In a mixing bowl, I am now adding the flour, baking powder, unsweetened cocoa powder, and spice mix. I am mixing these ingredients well together. I am separating the egg yolk and egg white. I will add the egg yolk to the flour mixture and set the egg white aside in a small bowl.

Now, I am adding the molasses mixture to the flour mixture and mix it to form a smooth dough. This dough needs to be chilled in the fridge for at least 12 hours, so I am wrapping it up in clingfilm or a freezer bag and placing it in the refrigerator overnight.

After 12 hours, I am taking the dough out of the fridge and on a floured surface, I am using a rolling pin to roll out the dough. I am then using a heart-shaped cookie cutter to cut out the hearts. I am filling them with apricot jam or a homemade cherry jam made with marzipan and chocolate. Once I have filled the hearts, I am putting another heart on top, making sure the edges are sealed.

I am then baking the gingerbread hearts for about 10 minutes in a preheated oven at 180 degrees Celsius. Once the gingerbread hearts have cooled off, I am melting some dark chocolate in a double boiler and dipping the hearts in the chocolate. I am placing the chocolate-covered hearts on a piece of parchment paper until the chocolate has solidified.

And there you have it, our filled gingerbread hearts are ready, and they look and taste divine. This recipe is a bit more time-consuming, but I believe it’s well worth the effort, especially during the festive season when we’re all feeling a bit more indulgent.
