Today, I’m going to show you one of my absolute classic favorites, a Gold Tröpfchen Käsekuchen, or also known as a Tränchen Kuchen, or a Gold Treppchen Torte, however you want to name it. This cake is simply breathtakingly delicious, and it looks super pretty with the golden tröpfchen on top. Its creamy yellow and beautiful Easter-like texture are perfect for Easter, and I just love it. I don’t know about you, but I believe this cake should never be missing at any family celebration. We always have it on our table, and we usually have a lot of cakes and desserts because we come from a big family.

Now, let’s move on to the ingredients and preparation of this cake. For this delicious torte, we need 200 grams of flour, 40 grams of confectioner’s sugar, 100 grams of cold butter, a pinch of salt, and an egg. You can also add some lemon zest to the mixture if you like.

For the cheesecake filling, we need 1 kilogram of quark, 250 milliliters of milk, 50 milliliters of neutral plant oil, 2 packets of vanilla pudding powder, 170 grams of sugar, 4 egg yolks, 4 egg whites, and 100 grams of sugar for the meringue topping. You will also need a 26-centimeter springform pan, lined with parchment paper and buttered.

Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit). First, let’s start with the crust. In a large bowl, mix the flour, confectioner’s sugar, salt, and egg until combined. Add the cold butter into the mixture and mix again using the mixer or by hand until the dough is smooth. Do not knead the dough for too long; otherwise, it will become too hard.

Then, press the dough evenly onto the bottom and sides of the prepared pan, using your fingers. Once done, put the crust in the freezer while you prepare the cheesecake filling.

Next, let’s make the cheesecake filling. In a large bowl, mix the quark, milk, oil, vanilla pudding powder, sugar, and egg yolks until well combined. In a separate bowl, whisk the egg whites until stiff peaks form. Add in the remaining 100 grams of sugar and continue whisking until the mixture is glossy and thick.

Take the crust out of the freezer and pour the quark mixture in it. Bake in the preheated oven for 60-70 minutes or until the filling is set. Once set, take it out from the oven and let it cool completely.

Finally, spread the fluffy meringue topping on top of the cooled cheesecake and bake it for another 10-15 minutes until the meringue is golden brown.
